Semana Santa is the Holy week before Easter. There are days that are important to observe and tradional dishes that needed to be made.
Seven dishes were prepared in a Mexican family: Capirotada (something like bread pudding), nopales (cactus), fried fish, fish soup, shrimp patties with red chili sauce, lentils, and a punch that was made with beets, oranges, lettuce and bananas.
The tradition of only seafood no meat on Holy Thrusday & Friday also every Friday through Easter.
Important dates and activities are Palm Friday (week before Easter) that is when they also do the via crucis, the stations of the cross, [eople also get pieces of palm tree and it gets blesssed you then place it in your home as an extra blessing.
Holy Thursday (3 days before Easter) is actually the remembrance of the day Jesus died on the cross.
Then grandmother always used to say Saturday (day before Easter) is the day the heavens opened right after 12:00 p.m. so all those following lent or abstaning from something through lent have completed their penance at this time.
You go to mass on Saturday or Easter Sunday. Celebrate Easter with Cascarones (confetti filled egg shells) that is very tradional, making them is a tradion in my family and having a nice family reunion. The best Easter is one that you can balance tradition with a little fun by incorporating modern picnic ideas.

I come from Oregon and now live here and am dying for real mexican food. It was my tradition to go somewhere each payday with my son and have chips and salsa..and have them make guacomole fresh at my table. And please do not suggest Julio Barrios..that is a joke.

The following restaurants are found on Edmonton Latino website.
http://www.latinoedmonton.com/latinoedmontondirectory.htm#26508524

The following have service in both English and Spanish. You can check the website I gave to find the addresses and ratings.

The 3 Amigo’s Authentic Mexican Restaurant
Acajutla
Mexico Lindo – received a 90% favorable review
El Rancho Spanish Restaurant

When you check out the website you’ll also notice that there are a few Chilean restaurants. I’m going suggest you check these restaurants out as they seem the most likely to be authentic according to the Edmonton Latino community’s website.

Hope this helps

Good Luck
